This curry is super simple, healthy and oh so good!

Ingredients

  • 1 tbsp olive oil
  • 2 onions, finely sliced
  • 4 cloves of garlic, grated
  • 5cm piece of ginger, grated
  • ½ tbsp turmeric
  • 1 tbsp garam masala
  • 1 red chilli (medium heat)
  • 1 tin coconut milk
  • 1 tsp tamarin paste
  • 600g boneless and skinless cod loin, cut into chunks
  • 1 bag fresh spinach
  • 400g brown basmati rice, cooked, to serve
  • 1 bunch fresh coriander to garnish on top
  • 1 lime

Method

  1. Heat the oil in a large saucepan over a medium heat, then fry the onion for 8 mins until translucent. Stir in the ginger and garlic and chili for 2 mins then add the spices and cook for another minute. Add the cod and coat in all the lovely spices. Pour in the coconut milk and 100ml water and tamarin paste stir, then simmer for 5 mins.
  2. Add the spinach, and simmer for 2 mins until the fish is flaky and the spinach has wilted. Taste, add some salt if needed. Squeeze the lime in. Serve with the rice, Top with that fresh coriander and Bobs your………. actually, he is probably not your uncle! Hehe! Enjoy
