Hands up if you like a classic fish finger sandwich. ? We do, especially when they’re homemade with thick, meaty portions of cod and flavoured with lemon and capers. This recipe is super simple and takes less than 30 minutes.

Fish Finger Sandwiches for all the family.

Ingredients

  • Cod (or any meaty white fish)
  • Slices of bread (for breadcrumbs)
  • Bread rolls (we choose ciabatta)
  • Eggs, beaten
  • Lemon zest
  • Capers
  • Tartare sauce
  • Salt and pepper to season

Recipe

Preheat oven to 140ºC.

To prepare the breadcrumbs, place the slices of bread onto a baking tray and cook in the oven for 10 to 12 minutes, until the slices start to go crispy.

In the meantime, season your cod with salt and pepper and slice into thick portions to make the fish fingers.

Remove the bread from the oven and switch the temperature up to 180ºC. Place the slices of bread into a food processor and blitz until you have breadcrumbs. Add a little lemon zest for flavour before laying the crumbs on a large plate or tray.

Roll the cod fingers in the beaten egg and then coat in breadcrumbs. Place onto a baking tray and cook in the oven for around 12 to 14 minutes, until the fish is hot throughout and breadcrumb is crispy and golden.

Make your fish finger sandwich! Add a good dollop of tartare sauce to the ciabatta, followed by a handful of rocket, a few capers, and finally the fish fingers.
