Ish Fish Pie
This is one of our favourite recipes. A hearty, healthy meal that tastes so good at any time of year. Using an Ish Fish Pie Mix, you make your own white sauce and creamy mashed potato topping. A true British classic.
1kg Maris Piper Potatoes, peeled and halved.
1 Leek, chopped
4 Spring Onions, chopped
Handful of Peas
25g Plain Flour
1 tsp Dijon Mustard
Preheat the oven to 180ºc .
Place the peeled and chopped potatoes into a saucepan. Cover with water and bring to the boil, then leave them to simmer until they are cooked through. Drain the potatoes and mash together with a splash of milk and salt and pepper to season.
In another pan, cook the spring onions and leek in the butter and flour until well combined, then whisk in the milk. Bring to the boil, reduce to a simmer, and keep whisking until the sauce has thickened.
Add the fish, mustard, and peas, and give it a good mix. Transfer to an ovenproof dish then spoon the mashed potatoes on top. Add a sprinkling of cheese, if you wish.
Cook in the oven for around 20 to 25 minutes, until the potato is golden and pie is bubbling at the edges.
